Step 1:

You will need

  • 250 g dark cooking chocolate, unsweetened or semi-sweetened
  • 160 ml cream
  • 35 g unsalted butter
  • 80 g dark cocoa powder
  • 2 tbsp water
  • 1 ltr water
  • 1 chopping board
  • 1 medium cooking pan
  • 1 small cooking pan
  • 1 large bowl
  • 1 medium bowl
  • 1 large knife
  • 1 tea spoon
  • 1 spatula
  • 1 whisk
  • 1 small tray or serving bowl

Step 2:

Prepare the Bain Marie

Place a medium cooking pan in a high heat and pour around 1 litre of water. Bain Marie is a heating technique where one container with the ingredient to be cooked is placed in another larger pan containing simmering liquid.
This technique is very important when working with chocolate. Now take the heat to take it to a simmer.
Step 3:

Prepare the chocolate

Place the chocolate bar on the chopping board and cut it into small chunks. Add 2 tablespoons of water into the pan, to help the chocolate melt and then put the chocolate pieces in.
Step 4:

Prepare the ganache

We'll melt the chocolate using a Bain Marie. Place the small cooking pan containing the chocolate into the medium one. Stir to help the chocolate get melted. This step should take around 8 minutes.

VIDEOJUG TIP

Chocolate is very sensitive to heat. It shouldn't become a dull colour at any time.
When melted, add gently the cream and combine well to make the mixture. This cream is called ganache. Do not remove from heat keep the pan at melting temperature. Then, turn the heat off.
Remove the pan from the heat source and leave it to rest until cool.
Step 5:

Add butter to the ganache

Once again, bring the water to a simmer in the medium pan, to prepare a Bain Marie. Then add the butter and stir to fully melt it. When done, turn the heat off and remove the pan.
Pour the ganache into a large bowl using the spatula to remove the rest from the pan and leave in the fridge for around 8 hours, until very stiff.
Step 6:

Make the truffles

Take the bowl from the fridge and place it in the work surface. Place the cocoa powder into the medium bowl then, with the help of a tea spoon, get small amounts of the ganache and make small balls rolling them into the palm of your hands.
Then put them into the bowl with the cocoa powder. Continue making small balls of chocolate placing them into the cocoa powder bowl. Roll them well in the powder, so the balls gets completely covered with the cocoa powder.
And finally place the truffles into a serving bowl or on a tray.
Step 7:

Serve the chocolate truffles

Your truffles are now ready. You can enjoy them with a nice cup of black coffee or with a glass of champagne.
