FISH IN ALMOND SAUCE

 

4 bream fillets
2 tablespoons lime juice
salt, pepper
1/2 cup (80 gr) blanched almonds
1 cup (250 ml) sour cream
2 tablespoons grated parmesan cheese
40 gr butter
1/2 cup (60 gr) grated tasty cheese
1/4 cup (20 gr) flaked almonds
 

1.  Place fish in a single layer in shallow glass dish, sprinkle with juice, salt and pepper, cover, refrigerate for one hour.
2.  Process blanched almonds until finely chopped, add cream and parmesan cheese; process until combined.
3.  Heat butter in pan, add fish in batches, cook quickly on both sides until browned.
Transfer fish to shallow ovenproof dish (2 litre/8 cup capacity).
4.  Spread cheese mixture evenly over fish, sprinkle with tasty cheese and flaked almonds.
Bake, uncovered, in moderate oven about 20 minutes or until browned and heated through.
