umquat Chutney
4 cups ( aprox. 1 kilo ) kumquats, halved and seeded .
4 cup sugar
1 cup orange or mandarin juice
1 cup chopped shallots
4 tbsp grated fresh ginger
4 star anise
12 cloves
16 cardamom pods
1 cinnamon stick
4 tbsp dried currants
If you like to make a hot chutney add 1/2 teaspoon of chilli flakes.
Cut kumquats in half, remove whatever seeds you can and put the seeds in a tea egg , so you can hang it into the saucepan .
Place all chutney ingredients in a saucepan, bring to boil, then turn heat down and simmer for 30 minutes.
Remove any pieces of spice that are visible.
Put into small marmelade pots.
